I find breakfast the most difficult meal to prepare. Cereal is ok but not very filling, what ideas do you have for nice, filling healthy breakfasts.

I used the River Cottage Bread book recipe for crumpets... it worked in the end!

I think next time I do them it will be a lot easier. Definitely worth a go, though.

Funny, that this has come up. Being gluten free seems to really limit quick breakfast options: cereal fruit & yoghurt seems to my standard, but I never ate cereal before I became glutenfree.
I can't live without crumpets anymore either, so have been working to create a gluten free recipe. of course, I'll post if i manage it ... and if i have time to photograph the crumpets before eating them (it has been years since i tasted one!).
I'll compare notes with you, Matt!

During the week, I will usually have either buttered (seeded batch wholemeal) toast, or porridge & chopped banana.

The weekends will consist of a Full Scottish Breakfast.... Fried (yolky egg), potato scones, bacon, lorne sausage, buttered toast, a cup of tea and a glass of fresh orange!

I'm salivating now!

This is a great breakfast, filling and delicious.

TASTE OF TEXAS SCRAMBLED EGG TORTILLA WRAPS

2 rashers bacon, fried crispy
*substitute with sausage or ham
2 eggs scrambled
Grated cheese
2 warm flour tortilla wraps
Texas Fire Water
Or
2 tablespoons of your favourite Truly Texas Salsa

Fill tortilla wraps with bacon bits (or substitute), scrambled eggs and top with cheese, Texas Fire Water or your favourite Truly Texas Salsa. Fold up the ends of the tortilla and roll. Serve immediately.

My Mum and I used to make this for breakfast a lot during my teenage years. Oat bran apple cinnamon muffins. Very healthy and filling ( http://bit.ly/8aTlSA )

After spending about a month last July in Spain working on a farm, I developed quite a taste for Spanish omelettes, bulked up with potato. You can keep it pretty healthy by using olive oil ( http://is.gd/6WczX )

Not sure if Zambia has asparagus, but if they do, I really like this asparagus and cheese fritatta as a breakfat / brunch option ( http://is.gd/6WcUp )

Lastly, oat porridge cooked in milk is always a great fallback. I like using jumbo oats as opposed to milled oats, and like using agave nectar as a sugar / maple syrup substitute. And lots of cinnamon.

My own personal favourite is smoked salmon or Mackerel with scrambled eggs. Not what you'd think of for 'healthy' but all good fats and lots of omega 3!!

Mmm, breakfast... Sometimes I wish I could eat breakfast all day. During the week I have porridge, usually with dates, and sometimes a boiled egg with toast, too. At the weekends, it's any number of eggy combinations. Yesterday I had spicy poached eggs and toast, which you can see here... Oh, and many, many cups of coffee.
