I find breakfast the most difficult meal to prepare. Cereal is ok but not very filling, what ideas do you have for nice, filling healthy breakfasts.

Have you tried drop scones? http://anneskitchen1.blogspot.com/2009/04/drop-scones.html In the time it takes to heat a frying pan you can make the batter (or even get out the bits the night before) they are delicious and light yet filling. Whilst I've tried lots of combinations honey and cinnamon is my favourite topping! You can go sweet or savoury depending on your own tastes, my boyfriend loves nutella on his!

Porridge is good, I normally add a tbsp of museli /granola and a some chopped fruit or berries to bulk out

Or slightly unconventional route I rather like cold savoury rice for breakfast.....

In order of preference:
Porridge. Made with half water half milk, a sprinkle of dried fruit and a drizzle of honey - when I can be bothered,
Leftover takeaway food (ok, maybe not so healthy)
Bacon sandwich with very lean grilled bacon or grilled tomato sandwich on toasted bread
or, most often, a large coffee and a large banana.

Hiya

Every Sunday Hubby and I have Breakfast Club - basically we sit down and eat together. I've tried to include some unusal things as well as the normal like homemade English Muffins, french Toast and yesterday we had Bill Grangers Puffy Apple Pancake which was my fave - although English Muffins with curd are also my faves ... I could go on and on.

Check out my Breakfast Club on my blog (http://thechocolatepot.blogspot.com - sorry my hyperlink isn't wanting to play along today) if you would like some more ideas for a more relaxed style breakfast.

Breakfast here is rarely exciting; pancakes are about as good as it gets. Porridge oats make a regular appearance during winter with added dried fruits.

I promise to try harder!

Poached egg on toast - quick filling and nutritious - even better with a bit of chilli sauce.

I'd also put in a vote for porridge - sometimes just on it's own with some honey, with clotted cream as a treat, with cinnamon for something different, also great with dates or any other dried fruit. Chocolate works well too!

OR my favourite special treat breakfast, Frumenty. I only have it if I go to stay with my mum who has an aga as you need to soak the wheat berries in water at a low heat for a few hours (overnight). When berries have burst and absorbed all the water add honey, grated orange rind, nutmeg, raisons and cream - delicious!

That Frumently sounds really yummy, will have to try that.

Oh, what is whey syrup? And pearled spelt - how is this different to spelt berries / grains? It's so interesting to hear about unfamiliar foodstuffs.

Thanks Alicia - Got it now. The pearled spelt is the spelt berries with the outer husk taken off - a bit like polished white rice instead of brown.

We make cheese from time to time and use the whey for making sauerkraut and other fermented foodstuffs, but there is usually a more than we need, so I might give your whey syrup a go next time - great idea and sounds thoroughly decedent!

I start every weekday with Bran Flakes, raisins and a sprinkling of Nature's Pleasure... but i would say that wouldn't i! I honestly do! But at the weekends.... poached eggs, wholemeal toast, a grilled tomatoe, and a berry fruit smoothie. Delicious!

I'm liking the recipe for drop scones, and am also excited at the prospect of making my own crumpets! During the week I normally end up just having toast or porridge (made with milk and topped with Lyle's Golden Syrup - childhood memories!).

If it's the weekend, and I've had a little too much to drink the night before, I often go for bacon and eggs, scrambled, or poached eggs. Otherwise, if it's nearer lunchtime, maybe a nice Welsh rarebit or pancakes - recipe here.

My favourite breakfast of all time has to be eggs benedict. Simply amazing. Oh man, I'm getting hungry just thinking about it. Weekend is definitely the time for making a nice breakfast...

Brunch...don't get me started on brunch....mmmm.

If you'd like any recipes for eggs, or Welsh rarebit, let me know and I'll put one together...

Do you know a recipe for crumpets? I am about to move out to Zambia and I am so sad to be leaving crumpets behind!

Hey Liz, I don't, but I know a member Liz does on her site - Recipes2Share

That's the one I'll be trying this weekend...or maybe even sooner!
