Jerusalem Artichoke Soup Recipe

Jerusalem Artichoke PhotographThe Jerusalem Artichoke is a really underused vegetable which looks looks a bit like a potato, has a texture a bit like a radish, and tastes nothing like either. It is actually the root of a species of sunflower and has a really unique earthy flavour.

Ah, well it was the lenses that I was interested in, at least today. My photography is fairly crappy (but a lot better after some advice from Jaden at Steamy Kitchen), and any and all tips come in useful.

I bought a Henckels santuko recently and am very pleased with it. I've not yet had time to make friends with it and I'm still a little bit wary of using it for any fast cutting. It handles beautifully, but it's much, much lighter than what I'm used…

I adore my Wusthof Culinar knives. They do a great job and they're gorgeous.

I think more people suggested Wusthof than Global, even though the latter does visually look better. Apparently the Wusthof steel lasts longer without pitting *shrugs* so I'll probably go with that - a 17cm Wusthof Santoku.

Holistic food is a good term - I think I should adopt it! In fact I was talking yesterday about how hard it is to pin down the positive benefits of organic food because they are...holistic. Food production touches on every aspect of life. Organic farming methods ensure the soil is replenished, the plants grow naturally, waste is recycled, less oil is used, the animals are treated right and we can eat healthy food.
