Courgette Pie - quick and easy

Courgette Pie - quick 'n easy

(1) Pkt. of JusRol Pastry Sheet - cut in half and reserve half for lid.
Roll to shape and place other half in base of buttered dish - prick with a fork and sprinkle some Semolina or Cornmeal over so the pastry doesn't go soggy. (approx. 1 tbl.spn.)

Then prepare the veg:
1 lb. courgettes - roughly chopped into small chunks (no need to peel)
1 red onion - peeled, halved and thinly sliced
1 clove of garlic (large or small) - crushed or chopped finely

5 minute Choc. Mug Cake (not!)

Has anyone tried this recipe out? I thought it was just awful - if anyone has had any success with it - I'd love to know.

I think the idea is a very good one, so if anyone has a recipe that works properly (!) please let me know.

Healthy (low calorie) Christmas Pud & Mincemeat Recipe

This is a little different to my last blog post! (Portuguese squid dish!) - but I tend to make my Christmas Puds around November time, then wrap and freeze them. Everyone seems to love this recipe as - (apart from being delicious) - isn't claggy or too heavy. (No suet is used).

Although steaming is a bit of a chore, it gives a much better taste and texture. I have tried microwaving this recipe but didnt like it at all.

WAS living there, been back in the UK for some time - trying to buy somewhere out there but its very difficult now. I keep my contact with Provence by my little business selling provencale items - 3 buying trips a year, cures the withdrawal symptoms for a little while!!
